Ingredients
1/4
bell pepper
3
asparagus stalks

olive oil
salt and pepper to taste

whole eggs
1/4
cup
liquid egg whites
1/4
cup
dried chorizo sausage
cilantro for garnish
Instructions
Roughly chop 1/4 of a bell pepper and 3 asparagus stalks.
Heat a frying pan over medium-low heat. Add 1 tsp of olive oil.
Sauté the vegetables for 2-3 minutes. Add salt and pepper to taste.
While veggies are cooking, whisk 2 eggs and 1/4 cup egg whites in a bowl. Set aside.
Chop 1/4 chorizo into small bite-sized pieces.
Add eggs to the veggies and cook, mixing eggs with a spatula every 30 seconds. When almost cooked, add chorizo and allow to finish cooking.
Top with chopped cilantro!
