Ingredients

  • 1/4 bell pepper
  • 3 asparagus stalks
  • 1 tsp olive oil
  • salt and pepper to taste
  • 2 whole eggs
  • 1/4 cup liquid egg whites
  • 1/4 cup dried chorizo sausage
  • cilantro for garnish

Instructions

  • Roughly chop 1/4 of a bell pepper and 3 asparagus stalks.
  • Heat a frying pan over medium-low heat. Add 1 tsp of olive oil.
  • Sauté the vegetables for 2-3 minutes. Add salt and pepper to taste.
  • While veggies are cooking, whisk 2 eggs and 1/4 cup egg whites in a bowl. Set aside.
  • Chop 1/4 chorizo into small bite-sized pieces.
  • Add eggs to the veggies and cook, mixing eggs with a spatula every 30 seconds. When almost cooked, add chorizo and allow to finish cooking.
  • Top with chopped cilantro!
